Two oils from our farm in El Gara, sold in 5-litre bidons, minimum 4 bidons (20 L): our first-press extra virgin, and a cheaper second press oil for cooking in quantity. Tiered prices, shown per litre.

  • Moroccan Picholine, Haouzia and Menara from our own groves in the Chaouïa

From tree to bidon

How we make our extra virgin olive oil

Know-how born on our family farm in El Gara, where Haj Ahmed planted the first olive trees in 1990.

  1. 01

    Picked by hand

    From early November, the olives from our groves in El Gara are picked by hand: Moroccan Picholine, Haouzia and Menara.

  2. 02

    Under six hours

    The olives are pressed within six hours of picking. The less they wait, the less they spoil: that is what keeps the oil fruity.

  3. 03

    Cold extraction

    Crushing and malaxing below 27 °C, extraction by centrifugation, with no solvent or heat: pure olive juice, nothing else.

  4. 04

    Testing and tasting

    Every batch is checked against the extra virgin standard (acidity ≤ 0.8 %) and tasted by the family before shipping.
