Why wait for it

What makes new-harvest oil different

An olive oil is at its fruitiest in the months after pressing. New-harvest oil has a smell of fresh olives and cut grass, a slight bitterness and a peppery kick in the throat that soften over time.

It is also the right time to stock up: a bidon bought at harvest time and stored well, closed, away from light and heat, lasts you the whole year.

Frequently asked questions

Reserving your new-harvest oil

What is new-harvest olive oil?

It is oil from the latest harvest, pressed only a few weeks earlier. It has a more intense fruitiness, a hint of bitterness and a slight peppery kick in the throat, which soften over the months. Many Moroccan families wait for it every autumn to stock up for the year.

When will I receive my new-harvest oil?

Picking starts in early November 2026 and the first deliveries in Casablanca are planned from mid-November 2026. Reservations are served in order of arrival. The exact date depends on the weather and the ripeness of the olives: we keep you posted on WhatsApp.

Is new-harvest oil more expensive?
